    Another simple yummy one I got from one of my students from Japan: soba noodles (ramen also works) with tahini and soy sauce.

    That’s it. I use like 3 tablespoons of tahini to 2 cups of noodles and just soy to taste.

    Takes 5 minutes. Addictive

    Idk if yall heard of him but Barry Lewis is one of my favorite cooking channels to watch. One of my favorites is his cheap vs steep series where he’ll make a food item with cheap ingredients then make that same food item with expensive ingredients and see which one is better. It’s surprising sometimes the cheap ends up being better

    Do you ever do any meal prep?

    It seems like such a great idea but I can never get it together enough to actually put together a week's worth of pre-cooked meals. I wish I could. We do plan the week in advance, though, so we know what we're doing from day to day. That keeps things less stressy overall.

    No, I don’t meal prep either. I don’t really plan what I’m eating the week in advance, I like the spontaneity of just eating what I feel like that day as long as it’s relatively healthy. But meal prep could definitely be useful if you get stressed out about that sort of thing. It’s also useful for stricter diets and families with little time. I assume certain foods are better than others when it comes to meal prepping. When I see people meal prepping it’s usually just a lot of chicken and rice lol

    I love this thread lol

    We're busy with our hands full for sure so the minimal planning we do is necessary... but one-pot meals are easy to stretch,
    that's what we usually do. Sloppy joes, chili. That stuff lasts for a week of lunches or easy dinners. It's just the whole operation of putting them together into the freezer in portions at the same time that's beyond my level of energy usually... which is too bad because it would be sooo handy to be able to just grab a couple of frozen servings of chili and throw them together in a pan & there's dinner. Some nights there's zero mental bandwidth for figuring out what to feed everyone; having something good ready with almost zero effort is just a nice thing to do for ME since half the time I have to figure it out. (I'm lucky that my husband actually *likes* to cook, so he helps, but we take turns.)

    PB is a handy fallback. Everybody loves peanut butter sandwiches or toast. Also easy is boiling pasta and throwing tuna with mayo onto it. For me, that's a meal... I use half olive oil mayo and half greek yogurt; instant simple tuna "salad".

    I'm the only one who will eat that, though.

    Frozen ravioli is also easy, just boil and warm a jar of sauce...

    Definitely not vegetarian, but I make a lot of rice with chicken recepies.

    Tikka Masala, Paella etc. Just had Masala today again. You can switch chicken/fish with (more) vegetables or something else easily

    I’ve never tried to make tikka masala myself! Will have to give it a shot. I do love paella too. Thanks for the suggestions

    I’m just losing my taste for it. All I really want anymore is ground beef sometimes, maybe chicken if it’s really tender, or like shredded bbq pork. But I get tired of the same things all the time

    Tbh 90% of the meat I eat is either chicken or fish. Sometimes a angus beef burger but I rarely eat pork or beef.

    Can't imagine life without a good salmon, shrimps or chicken dishes though

    Oh yeah do I love shrimp! That for some reason doesn't say "meat" to me, but of course it is. I never do get tired of shrimp. We do a lot of shrimp stir fry, & jambalaya with just shrimp or shrimp & kielbasa, which I also like.

    I just like easy options & sometimes I just don't want meat. Like, cheesy bean burritos are good, with mild taco sauce, greek yogurt for sour cream. Guacamole or sliced avocado. Sometimes I just do bowls. I've never tried making shrimp burrito bowls! Hmm that may be an option, I've had some excellent ones with veggies & cream sauce in seaside towns, so I know they can be scrumptious

    I’ve seen some sources say chickpeas are a good substitute for meat. Like chicken patties made out of chickpeas. Idk
